Uddersmith Dairy Ltd. Is a commercial beef farm in the Volin district of the Peace River Valley located near Rycroft, Alberta. We started out in the
early eighties as a small dairy in central Alberta. In 1995 we sold the dairy and started a mixed farming operation: cattle, grain and hogs in the
Peace area. We soon realized that the tread mill of modern chemical farming ( the use of herbicides and artifical fertilizers) was not sustainable. Our
soils were dead with no biodiversity! In 1997 we started to transition some of our hay land to organic production with the first 400 acres achieving
organic status in 1998. Since then our farm has expanded its organic land base to 8 quarter sections ( approx. 960 acres) of pasture and hay.

We started building our certified organic beef herd in 2004. At that time we started introducing Galloway cattle into our herd. Galloway were first
established for their quality beef in the rugged hills of Scothland. These rugged animals with their heavy winter coats are well suited for our northern
Alberta winters. Our first organic calf crop was certified in 2005.

Uddersmith cattle feed on organic pasture and hay year round. At NO time are they fed grain. We prefer to provide them with their nature natural diet
of green forage and dry hay. We do not force wean, but leave all calves with their mothers through with their first winter. This allows them to naturally
wean onto green pasture in the spring just prior to claving in mid- May. All calves are kept to maturity.

Our cattle are not force fed but allowed to grow at their own individual rate on natural forages. Our cattle reach maturity at 18-28 months of age.
Finishing on natural forage of hay and pasture produces a more flavourful beef with naturally occuring higher level of CLA fat.

The Weston A. Price Foundation is a non-profit, tax-exempt charity foundation in
1999 to disseminate the research of nutrition pioneer Weston A. Price, DDS,
whose studies of isolated non-industrialized people established the parameters of
human health and determined the optimum characteristics of human diets. Dr.
Price`s research demonstrated that men and women achieve perfect physical
form and perfect health generation after generation only when they consume
nutrient-dense whole foods and the vital fat-soluble activator found exclusively in
animal fats.

We as a family promote the Weston A. Price Foundation as we feel very
committed to promoting healthy diets.

" Eat whole unprocessed foods

" Eat beef, lamb, game, organ meats, poultry and eggs from pasture-fed animals.

" Eat wild (not farm-raised) fish, shellfish, fish roe from unpolluted water.

" Drink full fat milk product from pasture-fed cows, preferably raw and or Kefir, culture
butter, whole raw cheese and fresh sour cream.

" Use animal fats, especially butter liberally.

" Use traditional vegetable oil only, extra virgin olive oil, expeller-expressed sesame
oil, small amount of expeller-expressed flax seed oil and the tropical oil-coconut oil
and palm oil.

" Eat fresh fruit and vegetable-preferably organic in salads and soups or lightly steam
with butter.


" Use whole grains, legumes and nuts that have been prepared by soaking, sprouting or
sour leavening.

" Include enzymes-enhanced lacto-fermented vegetables, fruits, beverages and
condiments in your diets on a regular basis.

" Prepare homemade meat stocks from the bone of chicken, beef, lamb and fish and use
liberally in your diet on a regular basis.

" Use filtered for drinking and cooking.

" Use unrefined salt and variety of herbs and spices for food interest and appetite
stimulation.

" Make your own salad dressing using vinegar and natural traditional oil.

" Use natural sweeteners in moderation such as raw honey, maple syrup, date sugar,
coconut
