Health Benefits of grass-fed Beef
Omega 3 fatty Acids, beta-carotene, CLA and Vitamin E, all produced in living green plants tissues are stored in the cow`s meat and fat in forms that our bodies can easily access.

     Beta carotene -
Is used by the body to make Vitamin A and a powerful anti oxidant protecting cells from free-radical and oxygen damage.
     - Play a role in preventing cancer cell growth and
       cardiovascular disease.
Fat content
     Beef raised on pasture do not stop with beta-carotene-rich fat.
     - Contains only half the saturated fat and significantly lower in calories.

Meat tenderness
    
Meat requires a certain amount of Intramuscular fat to make it tender if not it will be dry, tough and flavourless.
     Grass-fed beef is leaner and consequently show less marbling between meat fibers yet it contains sufficient intramuscular fat within the meat fibers so that the meat will be as tender as heavily marbled
.
Tips for cooking Grass-fed beef
 
    When beef is cooked too fast, the high heat destroys the structure of the proteins, which makes the meat tough and chewy. The lower the heat beef is cooked, the more it will retain its tenderness and flavour.
     Grass-fed beef requires lower cooking temperatures.

Soames Roast Beef

   We have had lot of people ask us how we cook our roasts, and is there any secret to cooking our Organic 100% grass-fed beef? We don`t know, as we only cook our own beef, but here is our simple basic instructions. We called it Soames Roast Beef.


Instructions:
1) Allow roast to defrost in the fridge over night.
2) Check weight of roast.
3) Place roast in a pan with the liquid from bag.
4) Chop one onion and place around the roast.
5) Sprinkle small amount of salt and pepper on top of roast.
6) Seal roast in pan with tin foil of lid.
7) Place in oven at 350 degress F. Allow 1 hour for first pound and 20 minutes for every other pound thereafter. i.e. 3 lbs. roast would take 1 hour for first lb + 2x20 = 40 minutes. So a 3 lbs roast takes 1 hour 40 minutes to cook.
8) Take roast out from the pan and place on cutting board to cool before slicing.

MAKE GRAVY:

Take potato water from cooked potatoes, heat with juice from roast, bring to boil while stirring to thicken, add salt and pepper to taste.
Flour or corn starch can be use as substitute for potato water
