Health Benefits of grass-fed Beef
Omega 3 fatty Acids, beta-carotene, CLA and Vitamin E, all produced in living green plants tissues are stored in the cow`s meat and fat in forms that our bodies can easily access.
Beta carotene - Is used by the body to make Vitamin A and a powerful anti oxidant protecting cells from free-radical and oxygen damage.
- Play a role in preventing cancer cell growth and
cardiovascular disease.
Fat content
Beef raised on pasture do not stop with beta-carotene-rich fat.
- Contains only half the saturated fat and significantly lower in calories.
Beneficial Acids and Vitamins
- Three times higher in Omega-3 fatty acids.
Omega 3 - Important to the healthy function of the brain and linked to lowering blood pressure, fighting depression and reducing cancer.

Health impact on the herd
Considering all the health benefits from grass-fed beef, they too seems to experience immune-boasting effects.
Because pasture-fed cattle are not raised in confinement, they are not subject to the manure concentration, cramped living conditions and high disease pressures. Raising them in the pasture reduces or even eliminates the use of toxic pharmaceutical pesticides to control parasites and eliminates residues of high doses of antibiotics.
Environmental Benefits

- Large manure concentration that cause air and water pollution are prevented by rotational grazing.
Processed Animals
Internal organs from Organic grass-fed animals are safe to consume and very nutritious due to the fact that the animals have had no pharmaceutical chemicals and antibiotics that can cause organ failure and disease. "Healthy animals = healthy people".
Meat tenderness
Meat requires a certain amount of Intramuscular fat to make it tender if not it will be dry, tough and flavourless.
Grass-fed beef is leaner and consequently show less marbling between meat fibers yet it contains sufficient intramuscular fat within the meat fibers so that the meat will be as tender as heavily marbled.

HORSE TREKKING ADVENTURE

Our history,
Harvey & I both learned to ride as children. As our own family grew, we participated in 4-H horse club, many gymkhanas, local rodeos, ranch riding, and general trail rides. Many of the horses that we own now have been part of our family for years. We have been riding & packing into the mountains since 2004. We both love it! Packing and riding out in the wilderness has become a passion of ours. Whether it is a local trail ride along the banks of the Peace River, or preparing for a two-week pack trip into the Rocky Mountains, we will take any of it. Hearing the fire crackle, the loons calling from a lake, seeing horses out relaxing in the meadows, and the mountaintops surrounding you, is the greatest feeling. It gives a person “goose bumps”! A phenomenal feeling, that excites and refreshes you.
We now have acquired enough equipment, horsepower, knowledge of the trails, and confidence in our horses, to take other people along with us. We did an overnight ride in June of 2010. Through the summer we received more bookings for afternoon rides with picnics, a family reunion, we took out a wedding party that were here from Japan, and we managed to fit in our yearly pack trip with friends. The bookings we received last year were a good start, and we would like to improve on that this coming year.
We are now taking bookings for our “Winding trails & Wildflowers” Women’s Weekend Adventure to take place on June 3rd – 5th, 2011. Information is on the attached page.
We are also taking bookings for the July long weekend, June 30 – July 3rd, 2011. Afternoon rides with picnic, full day rides, or a weekend trip still available. Pack trip bookings for the summer should be booked early, we will customize to suit any needs.

MELISSA`S SHORT RIBS
Thaw and cut short ribs according to preference then boil for about 30 minutes or until soft. Remove, (save the broth for soup) Put in the pre heated oven (300 degrees) center rack. After few minutes brush it with BBQ sauce ( I Made my own BBQ sauce) turning every few minutes, let it brown on both sides. Have a wonderful meal!
BBQ SAUCE
Brown sugar, soya sauce, catsup, black pepper and mustard.
Tips for cooking Grass-fed beef
When beef is cooked too fast, the high heat destroys the structure of the proteins, which makes the meat tough and chewy. The lower the heat beef is cooked, the more it will retain its tenderness and flavour.
Grass-fed beef requires lower cooking temperatures.
